Saturday, October 8, 2022: Zucchini soup with zucchini and hummus pita sandwiches
Jack Frost came last night, but much of the garden appeared to survive. The peppers and eggplant, which I had covered, are still alive. The pole beans, tomatoes, tomatillos and Mexican sunflower, which I had not covered, are also alive. Anything near the arbor vitae trees, but not close to the ground, lived. The summer squash which I had partially covered, seems damaged but may still live a bit longer. It is still producing. The winter squash and pumpkin have seen better days. I'll probably pull all of those this weekend.
Tonight's dinner
- Zucchini soup
- Yellow summer squash from the garden
- Potatoes, onion, garlic and dill from Harmony Valley Farm
-
Zucchini and hummus pita sandwiches
- Yellow summer squash from the garden
- Peppers from the garden and Harmony Valley Farm
- I plan to make the pitas using the bread machine
I need to get busy preserving food today also. I harvested many peppers, tomatoes and tomatillos yesterday. The tomatoes are mostly green and are in a paper bag.
- Roast, puree and freeze tomatillos
- Chop and freeze hot peppers
- Quick pickle banana peppers, my favorite
- Freeze raspberries
- Shell and freeze edamame
